How do you keep your champagne?

Storage, the first step to successful tasting

Champagne is a living thing and can change over time. The way it is stored has a direct impact on the preservation of its aromas, enabling it to be enjoyed several months or years later. The Champagne Houses are constantly working on new materials and new bottle formats to enable their champagnes to stand the test of time while retaining their qualities. The cork stopper is one of the key components in the ageing of a bottle. Over time, it loses its hermeticity and gradually lets air through. It is particularly sensitive to its environment. A bright, hot, dry environment should be avoided when storing your champagne, as this could accelerate the ageing process and reduce its quality, taste and effervescence. Keep your champagne away from light, vibrations and wide variations in temperature, at around 15°C. These conditions help to preserve the hermeticity of the cork for as long as possible. The long period of ageing on the lees given to our bottles means that they can be enjoyed straight away. Be careful when handling a bottle of champagne. We advise you not to shake it or shake it too much. For optimum enjoyment, there are three steps to opening a bottle: First, take the bottle out of the fridge – it may have been stored upright or horizontally – when it is cold, between 8 and 10°C for a brut and 10 and 12°C for a vintage. Tilt the bottle, remove the cap and keep the cork under pressure. Finally, gently turn the bottle on itself to allow the cork to come out, while keeping it under pressure. In the past, bottles of champagne were much more heavily dosed than they are now. The American taste, over 100g of sugar/litre, was the norm last century. Today, the average is less than 12g sugar/litre. However, sugar helps to preserve the taste of champagne over several decades. With this drop in sugar content, the challenge of preserving bottles over time is a real one.

A 150-year-old bottle discovered by a friend of the House

A part of our history is re-emerging.

Between 1880 and 1906, an exceptional bottle was created. It was rediscovered at the beginning of the year, almost a century and a half later, by Mr Damien Vignaud, a pharmacist and wine enthusiast, found it in an antique shop. With the help of the company’s archives, we were able to obtain the date, from the Art Nouveau period, thanks to the label and the prickle of the bottle. Over time, its aromas have evolved, giving it an entirely different oenological profile. The bottle’s label also bears the words “Aÿ Carte d’or”. Yet another clue to the bottle’s origin when the bottle was created. This inscription is not a reference to a potential cuvée, but rather to the personality of the Champagne, close to Agéen champagnes. A historic bottle, its dark, almost caramelised colour is both disconcerting and unique. Its exceptional aromas, both on the palate and on the nose, give it a floral, gourmet and distinctive personality. The quintessence of Champagne. This bottle completes the archives of the House of Joseph Perrier archives. This bottle dethrones a 1926 bottle acquired at auction and becomes the oldest in our archives. Its high sugar content, 102g/litre, after laboratory analysis, has enabled it to stand the test of time. A habit of the time that is now a thing of the past. We would like to extend our warmest thanks to Mr Vignaud for for sharing this wonderful discovery and a piece of our House’s history with us. history.

Joseph Perrier certified ISO 22000!

This certification rewards the hard work, dedication and professionalism of the Maison Joseph Perrier teams.

As a consumer, buying an ISO 22000 product means choosing a safe product that complies with hygiene practices and whose foodstuffs are traceable throughout the supply chain.

The ISO 22000 standard is a recognised, voluntary certification that guarantees our consumers that our House is able to control the safety of our champagnes. The aim is to prevent, identify and control “hazards” throughout our process.

This certification, the fruit of several years’ work, is a major reward for our House and its teams. By way of example, since 2017, when we began to implement a quality management system, more than 183 documents have been created and are used on a daily basis on our production lines and in the various departments. They record all the work carried out by our teams.

Every year, an independent certification body will come and audit and challenge us, so that we can constantly improve.

“ISO 22000 certification rewards the constant rigour and daily attention of our teams. We are an artisanal company, on a human scale, and it is all the more a source of pride for us to obtain this certification. It’s not an end in itself, it’s a guideline that allows us to constantly question ourselves and move in the same direction to offer the best to our customers.
