Lauren Collin, a wonderfully talented artist and Benjamin Fourmon, an artisan in Champagne have combined their complementary skills with precision and finesse to create a truly exceptional bottle.
The Cuvee Tout de Blanc, limited to 1500 numbered magnums is the result of this encounter.
Grape variety: 100% chardonnay
Origin of crus: Chouilly, Avize, Le Mesnil-sur-Oger, Cumières et Epernay
Harvest: all 2014 reserve
Ageing: vinification in steel vats parcel by parcel, followed by (magnum) bottle aging for 5 years
Disgorgement: 4g/L, «extra-brut», may 2019.
Blended only from a tiny selection of specially selected 100% chardonnay wines, this elegant champagne is deliciously rich and savoury with a finish that sings with beautifully defined yuzu zest.

Fresh, very fine and delicate, there are white fruits on the nose, as well as peaches, nectarines and exotic notes. It the mounth, the attack is vivid followed by sweetness. The dominating peach character is eased by a lemony flavour.
Definitely a wine for food, perfect with wild Scottish smoked salmon or a duo of quail wrapped in vine leaves roasted in honey.

Our historic family-run House was founded in 1825 and is the only one making champagne in Châlons-en-Champagne today.
It stands out thanks to the know-how passed down through six generations.
