Fresh, briny, and delicately tangy, these oysters combine the flavor of the sea with the zesty notes of Granny Smith apples and lemon. An elegant and very easy-to-make recipe, perfect as an appetizer or to pair with a glass of Joseph Perrier Champagne.

Oysters, green apple, lemon, and dill
Step 1
Gently open the oysters, drain off the initial liquid, and then gently loosen the meat from the shell.
Step 2
Dice the Granny Smith apple into very small cubes and sprinkle them with a few drops of lemon juice. Thinly slice the shallot and finely chop the dill.
Step 3
Mix the diced apple with the shallot, dill, olive oil, and a little lemon juice. Add a twist of freshly ground pepper, but don’t add salt: the oysters naturally provide all the necessary briny flavor.
Step 4
Place a small spoonful of the topping on each oyster. Finish with a few strips of lemon zest and small sprigs of dill. Serve immediately on a bed of crushed ice.
